Technological elaboration for production of sparkling wines, strong and alcohol-free drinks from grapes and fruits

Now technological methods of raw-materials refining for alcohol drinks and production of wines for competitive, having no analogy with the wine assortments producing now, the development and introduction of integrated measures for produce will provide restoration and stabilization of wine-making, effective realization of products for domestic and external markets.

The Arguments For The Realization - The proposed initiatives, in principals, are new trends for wine production. For the first time, by the members of the Program the investigations will be conducted for production of sparkling wines from fruits and by the methods of bottle champ agnation from grapes and from strong alcoholic and non-alcoholic liquors of vegetable materials.

For the production of white and rosy sparkling wines by bottle champagnization it is proposed to use the grapes variety as “ARAZI” (the grape is white) and frost-resistant “MEGRABUIR” (the grape is rosy).

Together with wine, semi finished products (strong fruit juice, extracts, infusions) obtained during the refining of vegetable raw-materials, the production of ethyl alcohol from amaranth will give us a chance to introduce maximum quantity of raw materials into the sphere of production (among their number, wild grapes, not being used before), to increase the sphere of their use and to provide the production of new competitive varieties of production.

Objectives - Technological elaboration for the production of sparkling wines from grapes and fruits by bottle champagnization:

- Technological elaboration of the production of strong alcoholic liquors (dessert and strong liquors, special vodka, whisky) from vegetable ingredients:

- Technological elaboration of the production of alcohol-free drinks from natural vegetable ingredients:

- The production of experimental groups of new goods.

The Targets - The subjects of investigations are the following: grapes crop; apricot, peaches, wild fruits, blossoms and of the red mulberry, raspberries, plums, linden, nut-shells and others.

Chemical composition of wines, strong juices (fruit-drinks) and extracts obtained from mentioned products will be determined by assumed method in end chemistry, volatilize compounds- gas chromatographic methods.

Together with certain stages of studying optimum parameters of scientifically motivated effective technologies can be developed according to similar investigations and the choice of ingredients is possible.

The Term of Implementation - The program should be implemented during 3 years.

Approximate Total Cost - New technology for preparing of sparkling wines from new varieties of grapes “ARAZI”, “MEGRABUIR”, apricots and peaches will be proposed.

In accordance with detailed analysis of existing technologies for refining of fruit and berry materials, integrated system will be developed to get high-quality, semi-finished products and extracts from various vegetable raw materials.

New methods for the choice of optimal combinations of ingredients will be proposed to prepare strong fruit-juices and extracts.

The technology for the production of strong drink as whisky on amaranth alcohol will be elaborated.

The high productivity of technologies on refining of fruit and berry materials will be provided by low prime-cost and lack of some expensive ingredients (essence, dye-stuffs, aromatic products, colours).
